I. Ingredients

• 1,6 l water
• 140g Night-scented Lily stem
• 2 tbsp of salt (for Night-scented Lily stem’s marinade)
• 240g okra (lady finger) (about 8 pieces)
• 120g bean sprouts root off
• 320g tomato wedge skin off (about 2 pieces)
• 160g peeled pineapple
• 160g tamarind paste
• 8 leaves of each (braised vegetable and long coriander)
• 4 tsp of sugar
• 4 tbsp of fish sauce
• 1 tsp of chopped garlic
• Cooking oil




 
II. Direction

• Skin off the Night-scented Lily stems, cut in bias of 4 to 5cm long. Marinate it with 2 tbsp of salt for 5 minutes and then rinse off the salt with fresh water. Set aside.
• Peel the tomatoes, cut in 8 wedges. Cut in bias the okra (keep the seeds). Cut roughly the pineapple in pieces of about 2cm.
• In a pot saute the garlic with oil until fragrant and then add the water, bring to a boil.
• Place tamarind in the strainer with hand, deep in boiling water. Use chopsticks to stir the tamarind until dissolved into boiling water (about 2 minutes) and then take out tamarind seed.
• Add in Night-scented Lily stems, okra, bean sprouts, pineapple and tomatoes. Bring to a boil during about 3 minutes.
• Seasoning with fish sauce and sugar. Taste and adjust at your convenience. Turn of the fire.
• Take out from heat transfers to a soup bowl and top with braised vegetable and long coriander.

Mix all ingredients until sugar is dissolved, then add the chopped garlic and chili.

Rice Vinegar
Ÿ • 2 tbsp of rice vinegar

Ÿ • 1/2 tsp of salt
Mix all ingredients until the sugar is dissolved

Prawns
• 8 prawns strung on wooden stick
• Boiled the prawns in salted water, then peel and set aside

Vegetables
Ÿ • 50g lotus stems, cleaned and cut into 5 cm lengths
Ÿ • 50g ‘Bon Bon’ stems, sliced in 5cm lengths
Ÿ • 50g dry ‘Tien Vua’ soaked in water until soft & cut into 5 cm lengths
Ÿ • 50g ‘cu hu dua’ (palm heart), thinly sliced in 5cm lengths
Ÿ • 40g onion, finely sliced
Ÿ • 40g carrot thinly sliced
Ÿ • 30g minced fresh mint
Ÿ • 30g minced fresh Vietnamese basil
Ÿ • 40g whole cashews
Ÿ • 10g stir-fried shallots
 • To prepare the vegetable dressing, mix half of the sweet and sour fish sauce with the rice vinegar. Keep the leftovers of sweet and sour fish sauce as a dipping sauce.
 • Mix all crunchy vegetables, leaves, fried shallots and cashews with all the dressing prepared as above about 5 minutes, then drain and set aside



 
II. Direction

Rolls
Ÿ• 300g crunchy vegetables (first part of the recipe)
Ÿ• 8 boiled prawns
Ÿ• 8 mustard leaves
Ÿ• 8 whole spring onions blanched until soft for fastening
Ÿ• Sweet and sour fish sauce for dip

• Divided the vegetables in 8 parts.
• On a plate place a spring onion under the mustard leaf and then add 1 part of the garniture and wrapped.
• Top each roll with a prawn and tie the roll securely with a spring onion.

Ÿ •1 tbsp lemon juice

Ÿ •½ tsp of chili and garlic (A pinch of salt optional)

Salad
Ÿ •150g pickled or fresh carrot
Ÿ •200g lotus stem, washed and cut into 5 cm lengths
Ÿ •150g shrimps, deveined, cooked and peeled
Ÿ •100g lean pork, cooked and thinly sliced
Ÿ •½ onion, peeled and thinly sliced
 •1 tbsp Vietnamese mint leaves, finely chopped

Garnishing
Ÿ •1 tbsp unsalted Crushed peanuts (groundnuts)
Ÿ •1 tsp Fried shallots
Ÿ •Shrimp crackers, deed fried: optional



 
II. Direction

Dressing
• In a bowl adding lemon juice, sugar, warm water and fish sauce. Whisk until the sugar is dissolved completely
• Then add about ½ tea spoon of chopped chili and garlic. Taste it first and adjust with salt, chili or garlic as your convenience.

Salad
• Combine all salad ingredients prepare as above and mix well.
• Add salad dressing and toss gently.
• Arrange the salad on a serving plate. Garnish with crushed peanuts and fried shallots.
Serve immediately with the fish sauce and shrimp crackers on the side.

I. Ingredients
• 500g lean minced pork
• 20g fresh shrimp minced
• 30 rice paper sheets(or a bit more in case you break a few)
• 4 tbsp minced shallots (about 6 shallots)
• 4 dried wood ear fungus soaked in water until soft and sliced (50g)
• 50g dried glass noodles soaked in water until soft, drained, then cut into 5cm lengths
• 1 carrot cut in julienne
• 1/2 tsp pepper
• 3 tbsp of fish sauce
• Vegetable oil for the deep-frying
• 1 bunch of several leaves: Vietnamese basil, Shiso leaves (purple mint), mint leaves (lemon mint) & green lettuce leaves
• Fish sauce for dipping


 
II. Direction
• Make the filling first by combining all ingredients in a large bowl and mixing until well blended, set aside.
• To make the fried rolls wet a little bit the rice paper and smooth it with your fingers.
• Place 2½ heaping tbsp of the filling onto the rice paper. Fold one end of the wrapper over the filling, then fold the 2 sides parallel and roll up tightly, pressing to seal. Repeat until all ingredients are used up.
• Heat the oil in a wok over medium heat until hot. Deep- fry the rolls a few at a time for about 5 minutes each until golden brown on all sides. Remove with a slotted spoon and drain on paper towels.
• Place the fried rolls on a serving platter and serve with the lettuce, leaves and fish sauce on the side.
