. Medicinal Properties

Stuffed bitter melon with pork & mushroom
1. Ingredients
• Slices bitter melon about 8 inches length
• 2 eggs
• 2 tbsp peanut oil
• 1 - 2 tbsp light soy sauce
• 2 pinches white pepper

2. Direction
• Cut the bitter melon in half lengthwise, removes the seeds and slices each half crosswise in thin pieces. Beat the eggs in a bowl with 1 to 2 tsp of light soy sauce and a dash of ground white pepper
• Heat a wok until its surface begins to smoke. Swirl in the oil or lard and let heat 10 to 15 seconds. Add the bitter melon and sauté in the oil for about 1 minute. Sprinkle with 1 tbsp of light soy sauce and continue to sauté for another 1 to 2 minutes or until the melon starts to soften. Spread the melon pieces thinly over the wok surface. Pour the beaten eggs evenly over the melon pieces. Let eggs set about half a minute, then flip the mixture over to cook the other side. Cook until eggs are set and lightly browned
1. Ingredients
• 2 medium to large bitter melons (trimmed end, cut into 2 round pieces, take out seeds)
• 1/2 ground pork
• 2 mushrooms (soaked, chopped)
• 1/2 carrot (chopped)
• 1/2 regular tofu
• 3 slices ginger (minced)
• 3 cloves garlic (minced)
• 1/2 medium onion (chopped)
• 1 tbsp soy sauce
• 1 tbsp rice wine
• Few drips of sesame oil
• 1/4 tsp salt and pepper
• 1 tbsp cornstarch

2. Direction
• Marinate the ground pork with soy sauce, wine, cornstarch, salt and pepper for up to 30 minutes
• Combine tofu with ground pork, mashed to mix. Add in other ingredients such as minced ginger, garlic, onion and carrot. Mix well
• Stuff mixed pork into bitter melon pieces, place it on a platter. Repeat with others
• Steam on medium high heat for around 20-30 minutes
